Nekbat Terengganu: juadah berbuka



Bahan-bahan:
Nekbat mentah
Gula
Esen vanila (optional)
2 helai Daun Pandan
Air

Cara-cara:

1. Panaskan air sehingga menggelegak. Masukkan gula, daun pandan dan sedikit esen vanila. Sesudu gula bersamaan sebiji nekbat.
2. Apabila gula larut, masukkan nekbat. Bila nekbat kembang, masukkan sedikit air jika mahu berkuah. Tutup api bila air menggelegak.

Nota:
1. Saiz nekbat mentah biasanya 2 ruas ibu jari. Bersamaan dengan 1 sudu gula. Jika mahu lebih manis boleh tambahkan gula lagi.
2. Nekbat mentah boleh didapati di Pasar Kedai Payang Terengganu, Pasar Binjai Kemaman (masa bulan puasa) dan Gerai Kuih Gong Kapas (boleh try cari)
3. Masukkan dalam peti ais selepas masak untuk rasa sedap yang maksimum.

beef stew for a simple meal

or simply known as daging masak kicap
the Ingredients:

Oyster Sauce: only a dash of it is needed

black pepper sauce

chopped chillies, if you like it HOT

sliced meat (or leftover from meat cuts)

honey for the sweet taste

sweet soy sauce

mint leaves (optional)

ground black pepper
cauliflower

how to Cook it:
  1. mix one cup of meat with ground black pepper. if you like it hot, add 2 spoons. if not, just 1 spoon is enough
  2. add the oyster sauce (just a bit), black pepper sauce dan sweet soy sauce.
  3. add 2 spoons of honey and stir evenly. add a handful of cauliflower, sliced (optional).
  4. marinate the meat for 5 minutes.
  5. cook with microwave oven for 4 mins (at most). add chopped chillies and stir. garnish with mint leaves (optional). Siap!

Just Notes:
this recipe is very simple and suitable for bachelor like me. when eaten with hot rice, YUM! it is a favourite for its sweet and hot taste :)

Prawn Sambal Curry

sambal udang
the Ingredients:

anchovy powder, to taste

1 packet of masak merah chicken paste, campak-campak style

half clove of garlic, chopped

3 red onions, sliced

handful of chilli, chopped

2 tomatoes, chopped

a plate of prawns
tomato, chilli and oyster sauce

aji shio black pepper powder and salt

honey, to taste


how to Cook it:
  1. deshell and devein the prawns. the shell and the head is mixed with water and blended.
  2. marinate the prawns with sprinkle of black pepper and 2 spoons of honey. stir with chilli sauce and oyster sauce.
  3. fry the chopped garlic and chilli. add prawns.
  4. sprinkle seasoning (anchovy powder) and salt to taste. mix with 2 spoons of honey.
  5. add the blended mix and stir with Maggi masak merah chicken mix.
  6. add chopped tomato and tomato sauce. add sliced red onions. stir and it's done!

Note:
if you notice, i used chicken mix instead of combing the grocery shop for a prawn mix. but it does taste the same. if you are running out of time, need not deshell the prawns and blend them, instead just throw the prawns together with its heads intact, just like what i did, most of the time.

Pengat Pisang (Milky Banana Savoury) ... and other easy banana dessert







the Ingredients:

10 bananas, sliced
a glass of water

half of the palm sugar. can be substituted with 5 spoons of brown sugar

3 strips of Pandan leaves, knotted

2 spoons of Sago beads

1 tea spoon of Salt

1 glass of Coconut Milk

4 spoons of Sugar
2 spoons of honey
1 egg

1 carton of full cream milk (optional)

How to Cook it:


  1. boil water with sago beads until its colour becomes translucent. add salt, sugar and palm sugar.
  2. add coconut milk and pandan leaves. add full cream milk if you prefer much creamier dessert.
  3. add sliced bananas and honey. mix with egg. stir evenly until it boils before taking it off the stove.
  4. wait for it to cool down and put it into the fridge to serve cold.


Notes:
i was wondering about the best name to represent the pengat pisang with. FYI, there are a few methods to prepare banana dessert. for those who are health conscious and calorie counting, they can have the banana savoury sans milk as follows:

the gravy is translucent
the gravy is made with translucent sago and a dash of milk for the creamy taste

my fave is of course the one without the coconut milk/full cream milk. other than that, there is also the fried banana with sugar as follows:

banana is fried in 2 spoons of oil and when it's brown, serve it with sugar sprinkles. Easy oh!

Nasi Goreng Lada Hitam dengan Sotong (Black Pepper Fried Rice with Squid)

the Ingredients:
precooked white rice

Black pepper fried rice powder mix
1 egg

chicken granules, according to taste

half cup of mixed vege, more if preferrable


chopped chillies in 2 spoons of soy sauce

2 spoons of Oyster sauce
fresh green salad for deco

sliced squids
3 spoons of olive oil for the health-cautious. cooking oil for others

How to cook:
  1. heat pan with olive oil. mix with sliced squids and mixed vege.
  2. add dashes of chicken granules and oyster sauce. add egg.
  3. once the aroma wafted, add rice and the black pepper fried rice powder mix. stir like crazy (heh!)
  4. add chopped chillies in soy sauce. stir evenly.
  5. decorate with fresh green salad in a plate. siap!

Notes:
the recipe is common enough but is simply delicious, should you ever run out of onions and garlic.

if you don't have the fried rice powder mix, you can substitute it by simply adding ground black pepper powder and chicken granules for taste. however, the taste shall vary a bit.

squids can also be substituted with chicken or prawn or ikan bilis. if you use chicken, just use less oyster sauce.
